BLACK CARDAMON

Black cardamon is considered as “queen of spices” or “the soul” of dishes because of its lingering flavor in most Asian cuisine. It is not an exaggeration to state that a small amount of cardamom powder can simulate the fragrance and flavor of your food thousands of times.

Cardamon originated in India but is available worldwide today and used in both sweet and savory recipes. Nowadays, not only is this spice famous in Asia but it has also become an indispensable ingredient in European daily meals.

Cardamom fruit is shaped like an oblate spheroid with three segments and a diameter of 1 to 1.5 cm. Because it can be processed into cardamom powder and oil, this is the most significant portion. The most characteristic of cardamom is exactly the distinct flavor, highly aromatic, and resinous scent that no one can resist.

The major constituents of cardamom are 1,8-cineole, α-terpinyl acetate, sabinene, and β-linalool which can be used in food, aroma, and pharmaceutical applications. Due to the precious components, cardamom is thought to have impressive medicinal properties and has been used in traditional medicine for centuries.

For example, in one study, researchers found out that with three grams of cardamom powder a day in 12 weeks, high blood pressure levels can reduce significantly to the normal range. Researchers also believe that the spice’s diuretic action, which promotes urination to eliminate water that builds up in your body, particularly around your heart, may help lower blood pressure. Besides, cardamom powder can also increase the activity of certain enzymes that help fight cancer and enhance the ability of natural killer cells to attack tumors. Antioxidants which are found in abundance in cardamom, can protect cells from damage, stop inflammation from occurring and avoid chronic diseases to a considerable level.

Cardamom prefers to grow in hilly terrain with a cool environment, hence it is extensively planted in mountainous locations in Vietnam, such as Lao Cai. Farmers in this region are proactively increasing quality and productivity to maximize revenues and meet consumer demand.
